Beriyan (Beryani) is an iranian roast mutton food and one of the famous dishes of Isfahan and Iran, which is also famous in other countries and has many fans among Iranians. This food belongs to the city of Isfahan and is considered the most famous traditional food of Isfahan.
To prepare Beryan, First they cook the mutton. Then the cooked meat is minced and fried on a flame with spices such as cinnamon, saffron and mint. Then they put sliced almonds or pieces of walnuts on it and put it on the bread that has been greased with the same roast broth and serve. Usually, some roasted minced mutton liver and lungs are placed next to the Beryan. The broth of Beryan is also used as Tylit. To prepare Tylit, the broth container is filled with pieces of bread and curd is poured on it and served along with Beryan. These breads soaked in broth are called Tylit.
Beryan is usually served with Doogh (yogurt drink), basil and onion.
In Isfahan, there are several restaurants only for cooking and offering Beryan, which are called Beryani.
